Not really. Hawaiian barbecue has a lot of Asian influence so it’s not just pineapples and sweetness. Actually, the scent I associate most with it is that of burning kiawe, which is used a lot in barbecues and for smoking meat.

Interesting about the wood. I was kidding really about the pineapple, as here almost all savoury dishes that include pineapple seem to be called ‘Hawaiian’ – such as Hawaiian pizza.

Pineapples and Hawaii go together in most people’s minds I think. Hawaii supplied most of the world’s pineapple for a while in the 1900s, but now there are no canneries here and pineapple production is a much smaller operation.
