
Recently, one of our local bakeries shut its doors taking with it our source of sticky buns. They were a favorite treat of ours, so my wife looked into making our own. She’s had good luck with recipes at onceuponachef.com and found a promising option there. Yesterday, I got to try it out. Actually, I started on Saturday as the dough needs a while to rise, but can be refrigerated overnight.
We immediately made a change to the recipe, subbing macadamia nuts for pecans. It is Hawaii after all. But the whole process went fairly well. I only had an 8-inch square Pyrex pan rather than the 9-inch square cake pan called for, and I think that’s why the buns were climbing the pan’s side when I removed it from the oven!


I was also not prepared for the enthusiasm with which the buns shot from the pan when I inverted it onto a parchment covered tray. It got a bit messy, but the crucial question is, were they any good?



They were indeed. Soft and chewy, but crunchy with nuts. A sticky bun crisis has been averted and all is well, at least in this little corner of the world.

WAIT!!! WHAT! That would be amazing. I LOVE macadamia nuts and think this would be incredible. Now I need to try it.

They were very good, but too many for the two of us. Next time I’ll make a half recipe with smaller buns and that should work out well. But the recipe is a good one I’d say. You can find it via the link in the post.

You can freeze the leftover buns and reheat them in the oven. They turn out a little more brown, but just as good.! Maybe you could cover the pan with aluminum foil and they wouldn’t get extra brown.

Might try freezing one or two next time, but I think the trick is to make a half recipe and turn out smaller buns. I think that will do well.

They turned out well, but just too much of them. I’ll do a half recipe next time with a few tweaks and I think that will work out well.

Next time I’d make a half recipe, with smaller buns. It will work much better for two people!

They look really good, Graham. I guess you and the wife will be having them for morning tea for a while. Maybe freeze some before the sticky addition, next time. Yeast goods freeze well and can be refreshed with a quick bake.

I think next time I’d make a half recipe. Usually when we try something new we like to stick to the recipe and adjust it depending on the results. I roll my eyes when I read about people who recommend a recipe and then note that they changed the ingredients and the cooking method. I don’t find that terribly helpful!

My wife’s perfect world would include her picking out recipes and me making them! I like to bake though so I was happy to give these a go. Next time I’d do a half recipe, which wold be much more manageable for the two of us.
